After a day of hiking in the crisp autumn air, we returned to the cabin to find a plate of these warm, fragrant cookies waiting for us. One bite, and I was hooked!

Ingredients:

  • 1 cup rolled oats
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup pumpkin puree
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract

Equipment/Utensils Required:

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the rolled oats, all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, combine the pumpkin puree, maple syrup, melted coconut oil, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until well combined.
  5. Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, leaving some space between each cookie.
  6. Flatten each cookie slightly with the back of a spoon or your fingers.
  7. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  8. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
