Ingredients:

  • 2 large zucchinis
  • 1/2 cup raw cashews, soaked for 2 hours
  • 1/2 cup coconut milk
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional, for heat)
  • 1 clove garlic
  • 1-inch piece of ginger, peeled
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Sliced red chili, for garnish (optional)

Equipment/Utensils Required:

  • Spiralizer or vegetable peeler
  • Blender or food processor
  • Mixing bowl
  • Serving bowls

Instructions:

  1. Using a spiralizer or vegetable peeler, create noodles from the zucchinis and place them in a mixing bowl.
  2. In a blender or food processor, combine the soaked cashews, coconut milk, curry powder, turmeric, cumin, coriander, paprika, cayenne pepper (if using), garlic, ginger, lemon juice, salt, and pepper.
  3. Blend the mixture until smooth and creamy, adding a little water if necessary to reach the desired consistency.
  4. Pour the curry sauce over the zucchini noodles and toss until well coated.
  5. Divide the curry and zucchini noodles into serving bowls.
  6. Garnish with fresh cilantro and sliced red chili, if desired.
  7. Serve immediately and enjoy the delicious flavors of this raw vegan dish!
