Ingredients:

  • 2 large potatoes, peeled and diced
  • 1 small head cauliflower, chopped into florets
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) coconut milk
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

  • Cutting board
  • Knife
  • Wooden spoon
  • Serving bowls

Instructions:

  1. In the slow cooker, combine the diced potatoes, cauliflower florets, chopped onion, minced garlic, grated ginger, diced tomatoes, coconut milk, curry powder, ground cumin, ground turmeric, and paprika. Season with salt and pepper to taste.
  2. Stir until all the ingredients are well combined.
  3. Cover and cook on low for 4-6 hours or on high for 2-3 hours, or until the potatoes are tender.
  4. Taste and adjust seasoning with salt and pepper if necessary.
  5. Serve hot, garnished with fresh cilantro.
